Made up a new table that better suits our regular use of the boat...fishing. We can reinstall the big table in 5 minutes if we want to reconfigure.
Still have to do a few cosmetics, but it came out pretty good.
I used a Dremel tool to cut out 2 sq. ft. of bulkhead. I trimmed everything out in oak. I built the side brace to support the shelf.

Mount raises the motor about 3 inches as well as moving it aft. Lower unit clears the water while underway with kicker tilted up. Also provides extra clearance for steering cable.

I closed in the shelf with oak and added the stereo and weather instruments. Will upgrade to a new DSC radio later and cut it in on the right side.
