I have two sets of light for my cockpit. I have rope lighting installed under the gunnels. That's good for most purposes. I also have a spot light I installed on the bulkhead over the starboard window. This allows me to have a bright spot of light over my shoulder while I'm cutting bait. Here's a picture.

We hang a small battery-run light from a support for our camper back -- nice little light we can also use on the table for reading inside. Bot at WalMart for very little -- even makes a backup anchor light. Simple and easy and doesn't draw on boat power.
I bought a pack of 3 "click" lights at Walgreens for $5 and stuck one to the back of the cabin for extra cockpit light (might put up another). I've seen them in the automotive stores as well as Walmart -- you press the lens and they come on - 3 AAA batteries last 100 hours. They're certainly not a spotlight, but give a soft light effect that helps out.

Depends on what you want......
I've got two floodlights and a detachable spotlight on the stern as well as the bow. (Bow is remoely controlled from helm.)
If you maneuver around much at night in tight situtations, good lighting to see the shore is invaluable; front, rear, and to the sides (fore, aft, and abeam, more properly).
The power of these rear oriented lights will light up a launch ramp in the dark of the early morning and allow you to effortlessly back down the ramp with a daytime-like view! This was an unintended surprise benefit!
A headband mounted LED light works well for fishing around in the dark, and doesn't light up the night like the Gestapo Patrol, either.
If you want fish attracting lights, that is another matter, and depends on what you're trying to attract, etc.

I used a couple of flush mount 2 1/2 inch lights that throw about 80% of the light down.(Perko chrome plated brass trims. The lenses have lines thru them like polarization that deflects the light down)
I mounted them low enough so they wouldn't throw light over the back of the gunwale. They light the cockpit floor really well without shining in your eyes.
They install like puck lights. Drill the hole for the body, and the screws go into the material around the light.
