There's a rarely used forum "The Galley" that you might take a look there for recipe ideas. I seem to remember some one pot wonders in there.

Also, don't forget you can make a lot of stuff at home beforehand and seal it up in boilable bags. Stews and soups are great when done this way and they're easy to re-heat on the boat.
 
I like to use the ss steamer to do asparagus and corn, or brocoli or cauliflowr, carrots etc in the steamer and toss in on top a salmon with lemon and let all steam nice, yummy. Chili of course out of a can on those cold windy afternoons.

I make soup from broth starter and throw in all kinds of beans and stuff.

Porridge is a morning staple with rice milk.

And the nice thing about reheating something in a boilable bag is the hot water can be used for washing up afterwards.
 
I love potatoes very much and have eaten my far share over the years. If its a one pot meal you want there is nothing better or easier then potatoes. I now only eat red or yellows because of the lower glycemic levels. which my wife tells me is better for me.

potatoes cut into small chunks and fried in olive oil with a seasoning of your choice then covered with a small amount of grated cheese served in a bowl and eaten with chop sticks is one of my comfort foods. i just love it.

diced up potatoes with onions, garlic and bell peppers cooked in olive oil or butter is had to beat also.
 
Last Friday, my wife and I caught 15 nice sized blue crabs off our dock in NC (Bath). In one pot, we steamed the crabs (fully seasoned)and at the same time dropped into the pot two potatoes, cut into 1/8ths, threw in two ears of corn, husk still on, and steamed them all together. The last 4-5 minutes we threw in a pound of store bought raw shrimp. That is a one pot meal to die for. :smilep
