I recently bought a Weston 2300 vacuum sealer as a replacement for my Food Saver. The Weston is a nice "commercial grade" vacuum sealer but one I started sealing fish with it, I wasn't really happy with how it was working. The pump is good and fast, the sealer is excellent (about 3x as wide a seal as on a Food Saver), but it was sealing a bit early (not drawing as much vacuum as I like, still leaving a little air in the bag). It was clear to me that the vacuum sensor was set too high so it would detect enough vacuum too early and then seal. Since the sensor is not user adjustable, I made the following modification:
I opened the cover and found the sensor. It was on the circuit board and had a vacuum hose leading to it. I disconnected that hose and plugged the end that feeds back towards the chamber/pump with a screw and a little 3M 5200. Now the sensor always senses no vacuum and the pump will run until I hit the manual seal button. The unit will never seal until I tell it to and it works like a champ. I far prefer this method of operation anyway as it allows me correct errors if I have a crease in a bag etc, without having the auto sealer kick in. It's a good mod to make on other sealers that also have an automatic mode that can be overridden with a manual button.
