Crockpot Pheasant------ no ------ not Crackpot Peasant. :wink:
Dang-- I amazed myself again 8)
Once again-- measurements are approximate only :roll:
2 pheasant (cleaned, plucked and quartered) soak in salt water for one hour.
add to crockpot and heat on low while soaking bird-
1 cup white wine (I use what I will be drinking with dinner, in this case white zinfandel.)
1 cup water
1 teaspoon liquid smoke
1 tablespoon fresh minced garlic
1 sweet onion- diced
1 tablespoon sage
1 tablespoon thyme
1 tablespoon rosemary
? black pepper
Lightly rinse bird and place in crockpot, turning to coat bird.
Cook on low heat over night.
In the morning add baby carrots and cut potatoes, add vegetable broth to cover- continue cooking.
Total cooking time was 17 hours +/-.
