Salmon

putting fish on a stringer around here is a good way to troll for seals. :shock:
 
fillet a pink and place it skin side down on a cooking sheet or a glass pan. cover with salsa and bake for 15 min. Very good.
 
we eat a lot of salmon and for us spring king is hard to beat. but for me I am fond of ocean fall coho. we fish all summer long and eat and share most of what we catch come the end of september and october is when we fill our freezers. a 12 plus pound fall coho has a great thickness to its fillet and once they get around this size they tend to have a good fat content.
we are not like most i would say 95% would go for kings.
its hard to beat any fresh ocean caught salmon though.
 
Love mature ocean Kings, taste excellent on bbq.

1. King
2. Mature ocean coho
3. Pink
4. Sockeye (rare to catch, though)
5. Chum for smoking

1) Lummi Island Reef Net Sockeye
2) Just about any flash frozen Sockeye or Chinook from AK
